When I was a kid my dad would take us to the gas station every Saturday to get a treat before we started our Saturday chores. I’d frequently get one of those giant sugar cookies with the pink frosting – remember those?!

That’s what I wanted these sugar cookie bars to remind me of and I think I nailed it!

Would you make these?

For the Cookies
3 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup plain yogurt see note for substitutions
For the Icing
1/2 cup butter softened
6 cups powdered sugar
2 teaspoons vanilla
1/2 teaspoon almond extract
2 tablespoons cream
3 drops red food coloring optional
For the Cookies
Preheat the oven to 350ºF.
Sift dry ingredients together, set aside.
In a large bowl, cream together shortening and sugar.
Add egg and vanilla, mix well.
Add yogurt, mix well.
Add dry ingredients and mix until just combined. The dough shouldn’t be sticky to touch.
Line a sheet pan with parchment paper.
Spread the dough evenly over the sheet pan, it won’t quite reach the edges. Trim the edges if desired.
Bake at 350ºF for 15-18 minutes.
When the cookies bars are done, they should be light and dry in color.
For the Icing
Whip together the powdered sugar and butter on low speed.
Add the vanilla extract, almond extract, cream, and food coloring (if desired).
The consistency should be light and loose.
Beat for 5-8 minutes until it’s light and fluffy.
Once the cookie bars are cooled, spread the icing over the cookies.
Sour cream can be substituted for the plain yogurt. You can also use vanilla yogurt or Greek yogurt.
