Pink Vanilla Oatmeal 💗🥣

Today I am sharing with you another Valentine’s Day inspired breakfast!
This oatmeal recipe not only has a beautiful color but it is also delicious and super easy to make 🙌 Besides, this shows that healthy eating doesn’t need to be boring and plain 😉

Pink Vanilla Oatmeal 💗🥣

Ingredientes:

•1/2 cup rolled oats
•1/4 cup almond milk (I used rudehealth)
•1 tsp vanilla extract
•1 banana
•shredded coconut
•beetroot

Directions:

•In a pan add water and boil the beets until they get soft and tender. After the beets are boiled, drain them and save the water (about 1/4 cup).
•In a small saucepan, bring the almond milk and beet water to a boil and then add in the oats. While the oats are cooking add half of a banana and the vanilla, letting simmer for 5 minutes or until all the liquid has absorbed into the oats. Place the oats in a bowl once it’s fully cooked and top with the heart shaped banana and coconut. If you like you can add any other toppings you enjoy the most!
